Sablefish or Blackcod is also commonly known as butter fish due to its soft texture, delicate flakes and rich buttery taste. A very well managed fish with its population numbers well into the healthy range.

Blackcod is not a firm flesh fish so use a recipe that respects that. The most famous way you will find this fish served in restaurants is a "Miso Blackcod" which is marinated fillets that are then baked. Steaming this fish is another great option.
